Akabane : ramen having Hinai chicken and dried sardine broth at Ito (自家製麺 伊藤)

Jika-seimen Ito is very popular dried sardines broth ramen shop. Its head shop is in Oji area. And also there’s a branch in Akabane area. As well as the head shop, the Akabane branch have the high reputation.

Simple signboard is cool.

Appearance, Jika Seimen Ito (Akabane)

Where?

The shop is face to the main street, but the entrance is not face to the street. The entrance is face to beside the alley.

Narrow shop

“Jikaseimen” means homemade noodles. The shop makes their own noodles in the shop.
There are only 8 counter seats in the shop.
It seems sleeping places of an eel.
There’s no spaces to go through. There is a door just behind the seats.

At first, we entered the shop and bought a ticket at the ticket vending machine in front of the main door.
Then we got out once, and opened the door behind vacant seat and entered again.
Recently, I sometimes find such a narrow and small shops and restaurants. It is popular at the moment ?

Chuka soba

I ordered a Chuka soba (Chinese noodles, 中華そば, 600 yen).

Chuka soba, Jika Seimen Ito (Akabane)

The soup have expensive dried bonito from Kujyukuri of Chiba.
Abundant flavor of dried bonito attacked my nose. It’s so tasty.
Toppings is green onion only.

But the amount of soup is small !
And I think hot soup is essential to ramen.
It’s not hot. The shop serve soup lukewarm on purpose because they think hot soup deprive of the flavor of noodles.

Noodles, Jika Seimen Ito (Akabane)

But I can’t agree with them. Hot soup is essential to ramen 🙁
You can have more soup by extra charge, but yet, it was far from my satisfaction in amount.

The surface of the noodles were rough and picked up the soup more easily, but the noodles were snapped by teeth. Ah, I don’t like this tough noodles.

Never had I seen such a cloudy brown soup. It had bitterness of dried sardines a bit. It was tasty, so I want to have the soup hotter.
