Recently, new Sanuki udon shop is open in Tokyo one after another. We visited one of the shop named Goro (純手打ち讃岐うどん 五郎) in Kinshicho area the other day. They are already popular udon shop. When we got to there near closing time, there were still many people waiting.

This is bukkake udon. Bukkake is cold udon having cold soup based on soy sauce. Those udon had springy texture. They use flour from Kagawa prefecture.
Hiya-Atsu udon is cold udon in hot soup. The temperature was just for me. The soup had dried bonito extracts and it was so tasty and flavorful. The udon was softer than bukkake udon because the udon is in the hot soup.
